White Chocolate Raspberry Scones

Ingredients
- Scones:
- 3 cups plain flour
- 6 teaspoons baking powder
- pinch of salt
- 1 cup white chocolate chips
- 1 cup FROZEN raspberries
- 1 cup heavy whipping cream
- 1 cup Sprite - NOT DIET
- Icing:
- powdered sugar
- orange juice
- orange zest

Step 1
DO NOT STIR, MIX OR FOLD INGREDIENTS AT THIS POINT, UNLESS DIRECTED TO.
Preheat oven to 400 degrees.
In a large mixing bowl, sift the flour, baking powder and salt. (Sifting the flour will help make the scones light.) Add the white chocolate chips. Add the cream and sprite.
MIX through until almost together then add frozen raspberries. FOLD through. The mix should still have some dry spots - it should not be uniform like a cake batter.
Use a large ice cream scoop dusted with flour to form a scone. Place on a baking tray lined with parchment paper about 2" apart. The mix can be sticky so you may need to keep dusting the scoop and your fingers with flour.
Bake for 18 - 20 minutes, checking after 8 minutes, depending on your oven. The scones should be of a light color, not dark.
Prepare icing by whisking powdered sugar, orange juice, as needed for smooth consistency, and the zest of one orange.
Spread icing over warm scones and let them set in baking tray for 15 - 20 minutes. May be frozen for a later date.
