Ingredients

  • 2 large eggs
  • 1/4 c. plain soy milk
  • 1/2 c. of broccoli florets
  • 2 Tbsp shredded, low fat cheddar cheese (optional)
  • 1/4 c. canned black beans (optional)
  • 1/2 tsp. Tabasco sauce (optional)
  • 1/4 tsp. kosher salt
  • pinch ground black pepper

Preparation

Step 1

Beat eggs and milk with salt and pepper in microwaveable bowl. Stir in vegetables and microwave on high for 2-3 minutes. Run a knife around the edge of the bowl to release the frittata. (Soak the bowl immediately to facilitate clean-up). Sprinkle optional cheese on top of frittata and serve, if desired, with the black beans heated on the stove in a small sauce pan with the Tabasco.
