Ingredients
- Seasoning Mix:
- 2 tsp salt
- 1 1/2 tsp pepper
- 1 tsp cayenne
- Seasoned Flour:
- 1 1/2 C flour
- 1 1/2 tsp salt
- 1 tsp pepper
- 3/4 tsp cayenne
- Egg Wash:
- 2 eggs
- 3 Tbsp evaporated milk
- 1/2 tsp salt
- 1/4 tsp cayenne
- Oil for frying
- 8 pieces of chicken

Preparation
Step 1
Cover chicken with Seasoning Mix and refrigerate overnight.
Put Seasoned Flour ingredients in ziploc bag.
Mix Egg Wash ingredients and dip chicken into it. Let excess drip off then dredge in seasoned flour and let sit for 15 minutes.
Meanwhile, heat oil 1 1/4” deep to 350 °F.Shake of excess flour and place skin side down. Fry 5-8 minutes per side.
