Ingredients

  • FROSTING:
  • 2 c. all purpose flour
  • 2 tsp. baking powder
  • 1 1/2 tsp. baking soda
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 3/4 cup oil
  • 2 cups sugar
  • 4 eggs, beaten
  • 2 cups carrots, peeled and grated
  • 15 1/4 oz. can crushed pineapple
  • 1/2 cup margarine, softened
  • 8 oz. pkg. cream cheese, softened
  • 1 tsp. vanilla
  • 16 oz. pkg. powdered sugar
  • Blend ingredients together until smooth and creamy for frosting

Step 1

Combine all ingredients for cake. Blend well and pour into a greased and floured Bundt pan. Bake at 325 degrees for 40-45 minutes or until cake tests done with a toothpick. Cool; frost while still warm.
