Oriental Salad (Ramen)

Ingredients
- 3 packages Ramen noodles
- 1 chopped onion
- 1 cabbage (small) shredded *
- 1 cup nuts (peanuts or cashews)
- 4 teaspoons sesame seeds***
- DRESSING
- 1 cup oil
- 2/3 cup sugar
- 3/4 cup vinegar
- seasoning packets from noodles**

Preparation
Step 1
Place ½ the noodles in a shallow dish – add cabbage, onion and nuts (if using peanuts). Cover with remaining noodles. Mix dressing ingredients and pour evenly over the noodles. Cover and let sit overnight, stirring gently ½ way through to get all noodles softened. Add nuts (if using cashews).
(*) We use 1 bag of cole slaw mix instead of cabbage – it adds color
(**) I make it using chicken flavor and cashews, due to possible peanut allergies. Shari uses beef flavored noodles and peanuts
(***) We treat the sesame seeds as optional, since I don’t always have them in the house
