Ingredients

  • 2 egg , beaten
  • 4 rashers bacon , chopped
  • 300 g mushrooms , sliced
  • 400 g frozen peas
  • 2 garlic clove , crushed
  • 2 inches fresh root ginger , grated (or 2 cubes frozen ginger)
  • 4 tsp soy sauce , plus extra to serve
  • 2 tsp sweetener (or sugar)
  • 500 g cooked basmati rice

Preparation

Step 1

Heat a non-stick frying pan coated with cooking oil, then tip in the egg. Leave to set for 30 seconds-1 min, swirling every now and again, then tip it out and finely slice. Add bacon and mushrooms to pan, then fry until golden, about 3 mins. Add peas, garlic and ginger, then cook for 1 min.

Mix the soy sauce and sweetener together. Turn up the heat, add the cooked rice to the pan, heat through, then splash in the sweet soy sauce. Stir through the egg and serve straight
away, with more soy sauce if you like.
