Ingredients

  • Cucumber Dill Sauce:
  • 1 lb. 1-inch cubed beef
  • 1/4 olive oil
  • 2 tablespoons fresh squeezed lemon juice
  • 1 tsp. lemon zest
  • 1 tablespoon fresh oregano finely chopped
  • 1 tablespoon fresh mint finely chopped
  • 1 tablespoon fresh rosemary finely chopped
  • 6 garlic cloves finely chopped
  • 1/4 tsp. salt
  • 1/2 tsp. crushed red pepper
  • 1/2 tsp. black pepper
  • 1 bell pepper cut into 2 inch pieces
  • 1/2 red onion cut into 2 inch piece
  • 1 cup Greek yogurt
  • 1 English Cucumber, cubed in 1.8 squares
  • 1 teaspoon dried dill or 1 tablespoon fresh dill
  • 1/4 tsp. salt
  • 1/8 tsp. smoked paprika
  • 1/4 tsp. black pepper

Step 1

In medium mixing bowl, combine meat and all ingredients except bell pepper, onion. Stir well and let marinate for 1 hour. On soaked wooden skewer, alternate meat, bell pepper. On medium heated grill, cook for about 10 minutes.

Combine all ingredients for sauce and serve spooned over Kabobs.
