Ingredients

  • 1 1/2 cups aged cheddar (at least 3 years)
  • 3/4 cup flour
  • 1/4 cup butter, chilled and cut into cubes
  • 1/4 tsp salt
  • large pinch of cayenne
  • 2 tbsp milk

Step 1

Put the cheddar, flour, butter, salt and cayenne into the bowl of a food processor and pulse until well combined and crumbly. Add the milk and pulse until it starts to come together. Remove the dough from the food processor and gather it into a ball. Cover with a tea towel and let it rest for about 20 minutes.

Preheat the oven to 350F. On a lightly floured surface, roll the dough to 1/8" thickness and cut into shapes. Transfer to an ungreased cookie sheet. Bake for 10 to 12 minutes, until pale golden.
