Ingredients
- 1 1/2 # mild Italian sausage links
- 1 large yellow onion, cut in1/2 and in 1/4" strips
- 1 poblano pepper, cut in 1/2" strips
- 1 yellow bell pepper, cut in 1/2" strips
- 1 red bell pepper, cut in 1/2" strips
- 3 garlic cloves, chopped
- 28 oz can whole San Marzano tomatoes
- 1 Tbsp olive oil
- Salt and pepper to taste.

Preparation
Step 1
Heat olive oil in large pot. Brown sausage links on both sides. Remove from heat. Add onions and stir occasionally until browned and soft. Crush whole tomatoes by hand into the pot and add juice. Cook 5 minutes. Add peppers and garlic and cook about 20 minutes or until peppers softened. Season to taste with salt and pepper. Add sausage, cover and cook 20 minutes more.
Serve in a bowl or on toasted buns.
