Ingredients

  • 2 cups italian tomato sauce (may use canned spaghetti sauce)
  • 1 lg. Egg
  • 2 tbsp. Water
  • 2/3 cup dry bread crumbs
  • 1/3 cup parmesan cheese
  • 6-8 boneless, skinless chicken breast
  • 1/4 cup olive oil (or vegetable oil)
  • 2 cups shredded mozzarella cheese

Preparation

Step 1

Heat oven to 350. Heat spaghetti or tomato sauce.
Mix egg and water. Mix bread crumbs and parmesan cheese.
Pound chicken breast between plastic wrap until aprox 1/4 thick or less.
Dip chicken into egg mixture, then into bread crumbs.
Heat oil in skillet and cook coated chicken breast until done.
Place cooked chicken breast into casserole dish add tomato sauce, sprinkle with parmesan cheese and mozzarella cheese. You may add another layer of chicken, sauce and cheese, ending with mozzarella cheese. Bake uncovered about 25 minutes or until sauce is bubbly and cheese is lightly brown.
