Spinach Artichoke Dip

A friend shared this recipe with me years ago and said it was Houston's Spinach Artichoke Dip. I'm not sure about that but it sure is close!

Ingredients
- 2 boxes frozen spinach
- 8 oz sour cream
- 4 oz cream cheese
- 1 C Parmesan cheese
- 1 can artichoke hearts
- 1/2 white onion, chopped
- 1 stick butter
- 8 oz Monterrey Jack cheese

Preparation
Step 1
Cook spinach 15 minutes and drain. Saute onion in butter; stir in sour cream, cream cheese and Parmesan. Stir until creamy. Add spinach and artichokes. Spoon into ovenproof dish (or individual ramekins). Cut up cheese and place on top to cover. Cook at 350 °F for 20 minutes until browned and bubbly. Serve with tortilla chips, sour cream and salsa.
