  • 1/2 cup firmly packed brown sugar
  • 3/4 cup molasses
  • 2 eggs
  • 1/2 cup organic smart balance or earth balance
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon cloves
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger

Step 1

Preheat oven to 375 degrees. Spray pan with vegetable oil.

In large mixing owl, combine 1 1/2 cups flour and remaining ingredients at low speed of moxer until blended, scraping bowl often. Increase speed to medium and beat two minutes or until very smooth. reduce speed to low; add remaining flour, 1 cup at a time, until dough is very stiff.

Press dough into pan cavities. Bake 6-8 minutes or until edges are lightly browned. Turn pan over; lightly tap pan to remove cookies. Cool on a cooling rack.
