Ingredients
- 2 eggs
- 1 cup sugar
- 1/2 cup cooking oil
- 1-1/2 cup flour
- 2 tsp. ground cinnamon
- 1 tsp. baking soda
- 1/2 tsp salt
- 1 10 oz. frozen raspberries in syrup, thawed
- 1-1/2 cup coarsely chopped walnuts

Step 1
1. Beat eggs, add sugar and oil. Beat until well combined.
2. Add flour, cinnamon, baking soda and salt. Beat until well blended, (batter should be thick ). Stir in the partially thawed undrained berries and nuts.
3. Pour batter into a greased 9x5x3 loaf pan or (2) 7.5x3.5x2 loaf pan. Bake in a 350 degree oven for 55 to 65 minutes, (smaller pans for 50 to 55 minutes) or until a toothpick comes out clean.
4. Let cool in pan for 10 minutes. Remove and cool on a wire rack. Wrap and store in refrigerator.
