Ingredients

  • Dressing:
  • 2 zucchini
  • 1 or 2 yellow squash
  • Red bell pepper
  • shallots (sliced)
  • olive oil
  • salt and pepper
  • Olive Sundried Tomato
  • Handful of pitted green olives
  • handful of Kalamata olives
  • handful of sundried tomatoes

Preparation

Step 1

Saute shallots in olive oil with salt and pepper until softened, add zucchini, summer squash and red bell pepper. Salt a little more and toss. Saute until golden. Add hot veggies to bowl with olives and tomatoes. Dressing: Slice olives in half; slice tomatoes in strips, put in bowl with olive oil, add dired thyme (sprinkle). Pour dressing over the vegetable and mix lightly.
