Quiche Lorraine

A family recipe (not my family) that is said to have come from Lorraine. I was skeptical too, but this is a big winner with my family and friends.

I also experiment with cheese and fillings. Substitute Swiss or even Cheddar (Cheddar and Broccoli is fantastic). Try mushrooms, broccoli or zucchini in place of the bacon (around 1/2 cup of veggies is approximate to the bacon)

Ingredients

  • 1 layer pastry dough
  • 4 slices bacon, cooked and crumbled
  • 4 eggs, room temp
  • 1 cup 1/2 n 1/2
  • 1/4 tsp salt
  • 1/8 tsp white pepper
  • 1/8 tsp ground nutmeg
  • 1 cup gruyere cheese, shredded

Step 1

Preheat oven to 375 degrees. For glass, bake at 350

1. Fit pastry into a deep dish pie pan, or a tart pan.*

2. Sprinkle bacon onto bottom layer of pastry (or veggies if substituting)

3. Beat together: 1/2 n 1/2, eggs, salt, pepper and nutmeg (using a blender is best)

4. Pour eggs over bacon and sprinkle with shredded cheese.

5. Bake for 45-50 minutes, until eggs are set in middle. Cool slightly and serve

*For Tart Pan, check at 40 minutes, usually doesn't take longer than 45 minutes
