  • 1 pkg. white cake mix
  • 1 pkg ( 4-serving) Jell-O Lemon Flavor Instant Pudding
  • 1 cup water
  • 4 egg whites
  • 2 Tbsp. oil
  • 1 pkg (16oz.) powdered sugar
  • 1 pkg (8 oz) cream cheese
  • 1/2 stick butter, softened
  • 2 Tbsp. Lemon Juice

Step 1

Preheat oven to 350° F. Beat cake mix, pudding mix, water, egg whites, and oil in large bowl with electric mixer on low until moistened. (Batter is thick) Beat on medium speed for 2 minutes. Spoon batter evenly into 24 lined muffin cups.

Bake 21 to 24 min or until wooden toothpick inserted in centers comes out clean. Cool in pans for 10 mins: remove and cool completely.

Meanwhile, beat sugar, cream cheese, butter, and juice with mixer on low until well blended. Frost cupcakes.

Jazz it up: Stir 1 tsp. grate lemon peel into frosting mixture. Garnish with additional lemon peel.
