Ingredients

  • 2 1/2 # onions, thinly sliced
  • 1/4 C butter
  • 1/4 C sherry
  • 5 C water
  • 2 12oz cans beer
  • 2 Tbsp Worcestershire sauce
  • 3 Tbsp chopped parsley
  • 9 beef bouillion cubes
  • 2 cloves garlic chopped
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp dry mustard
  • 1/4 tsp dill
  • 1/2 tsp celery seed
  • 1/8 tsp marjoram
  • 1 bay leaf
  • 2 C shredded swiss cheese
  • 2 C croutons

Preparation

Step 1

Separate onion into rings and cook in butter in large Dutch oven, medium heat for 25-30 minutes stirring frequently. Add sherry and cook 5 minutes. Add remaining ingredients (except croutons and cheese). Bring to boil, cover, reduce heat and simmer 1 hour.

Place ovenproof bowls on baking sheet. Ladle 1 C soup in each. Top with 2 Tbsp croutons. Sprinkle 2 Tbsp cheese over croutons. Broil until cheese melts.
