Ingredients
- 1 lb. white pea beans
- 4 cups cold water
- 1 onion, sliced
- 1/2 tsp. salt
- 2 tsp. cider vinegar
- 1/2 tsp. mustard
- 1 tbsp. brown sugar
- 1/4 cup molasses
- 1/2 cup ketchup
- pinch pepper
- water as needed

Preparation
Step 1
Soak beans overnight. Drain. Rinse.
Mix seasonings, add onion to 6 cup casserole. Add beans and water to casserole. Cover and bake at 250 degrees for 7 hours. When tender remove 1 cup of beans, mash then stir back in. Cover, continue to bake. Add water as needed to keep beans just covered. Remove lid one hour before serving to darken.
