Ingredients

  • 1 1/2 pounds boneless, skinless chicken thighs

  • 1/2 medium chopped onion

  • 1 small green bell pepper, sliced

  • 1 small red bell pepper, sliced

  • 8 ounces sliced mushrooms

  • 3 cloves of garlic, minced

  • 2 15.9-once cans stewed tomatoes

  • 1/2 cup dry red wine or apple juice

  • 1 tsp. Italian seasoning

  • 3 tablespoons olive oil

  • salt and pepper to tast

Directions

1. Season chicken with salt and pepper. 2. In a large pot sear chicken in one tablespoon of olive oil on both sides until a golden brown crust appears. 3. Reduce heat to medium and remove chicken to a separate plate. 4. Add second tablespoon of oil to the pot and add peppers, onion and mushrooms, and sautéing for about 10 minutes or until vegetables begin to brown, stiring often. 5. Reduce heat to medium low and add garlic, allowing it to soften for about five minutes. 6. Deglaze the pan with wine or apple juice by adding it to the pot and scraping up all the bits from the bottom. 7. Add in stewed tomatoes and Italian seasoning, stirring to incorporate all the ingredients. 8. Return the chicken back to the pot, cover, set to simmer, and allow to cook for 1-2 hours.
