Ingredients

  • 10 Lasagna noodles
  • 2 Tbl Extra virgin olive oil
  • 1/2 C Finely chopped onion
  • 1 Tsp Salt
  • 1 Egg
  • 3/4 C Rocotta cheese
  • 1 C Shredded mozzerella cheese, divided
  • 1lb. Ground beef
  • 1pk. (10oz) Chopped spinach thawed/squeezed/drained
  • 1 Clove garlic, minced
  • 1/4 Tsp Ground nutmeg
  • 1/2 C Grated parmesan cheese
  • 1 26oz Jar Meatless spaghetti sauce

Preparation

Step 1

1. Preheat oven to 375F. Cook lasangna noodles according to pkg. directions. Drain water, reserving 1/3C of the pasta cooking water. Place noodles on wax paper.
2. Cook ground beef in a large skillet over med. heat until no longer pink. Drain grease.
3. Add oil/spinach/onion/garlic/reserved pasta water into a pan. Cook 10min. stirring occasionally on med. heat. Remove from heat, add seasoing. Let mixture cool.
4. Stir in egg/ricotta cheese/1/2C parmesan cheese & 1/2C mozzerella cheese.
5. Pour 1C of spaghetti sauce into a ungreased 13x9 dish.
6. Spread 1/3C meat mixture over each noodle; carefully roll up. Place roll ups seam down over sauce. Top w/remaining sauce then sprinkle w/remain parmesan cheese & mozzerella chesse.
7. Baked uncovered 20-25min.
