  • 4 large ripe tomatoes
  • 4 tbsp finely chopped green onions
  • 1/2 cup sour cream (not fat free)
  • 1 1/2 cups grated pepper jack cheese
  • 1/4 cup Parmesan cheese (about)

Preparation

Step 1

Lightly grease a baking sheet (with sides) or a broiling pan.

Cut the tomatoes into 1-inch thick slices, discarding both ends. You will have about 12 slices of tomato. Lay the tomatoes on the baking sheet in a single layer. Set aside.

In a small bowl, stir together the green onions, sour cream and grated pepper jack cheese. Divide the mixture evenly among the tomato slices and spread the mixture over the top of each slice. Lightly sprinkle the tops with Parmesan cheese.

Place underneath the broiler and broil just until the cheese is melted and lightly browned. Keep an eye on it, so that the tops don't burn!
