Ingredients
- 1 tbsp canola oil
- 1 yellow onion, chopped
- 1 can (28 ounce) crushed tomatoes
- 1 cup sliced carrot
- 1 cup sliced celery
- 1 red bell pepper, chopped
- 1 to 2 tsp minced fresh jalapeno pepper
- 1 can (19 ounce) red kidney beans, rinsed
- 2 cups cooked brown rice, wild rice or bulgur
- Salt, to taste
- Pepper, to taste

Preparation
Step 1
Heat oil in a large saucepan over medium heat. Add onion; cook, stirring occasionally, 6 minutes or until tender.
Stir in tomatoes, carrot, celery, bell pepper and jalapeno pepper. Simmer uncovered, stirring occasionally, 30 minutes.
Stir in kidney beans and rice. Continue cooking 5 minutes or until heated through. Season with the salt and pepper to taste.
