1 London broil. about 3 Ibs.
2 Tbsp. olive oil
2 Tbsp. lemon juice
4 oz. cream cheese, softened
2 Tbsp. blue cheese. crumbled
½ Tbsp. fresh thyme leaves, minced
1 Tbsp. fresh basil leaves, minced
½ Tbsp. fresh oregano leaves, minced
1 Tbsp. fresh chives or green onion, minced
2 cloves garlic, minced
1 tsp. salt
½ tsp. pepper
1. Cut a lengthwise pocket in steak. f 2. Marinate in the olive oil and lemon juice for 1 to 2 hours at room temperature. 3. Mix together softened cream cheese with blue cheese. fresh herbs, garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper. 4. S tuff pocket with herbed cheese mixture. Fasten with toothpicks. 5. Sprinkle steak with remaining salt and pepper. 6. Place steak in a large roasting pan or jelly roll pan lined with foil. 7. Broil about 3 inches from heat for 5 to 6 minutes on each side or until cooked to desired doneness. 8. Slice in thin diagonal slices against the grain. 9. Serve immediately.
