Ingredients
- 1 C diced celery
- 1 small diced onion
- 1/4 C butter
- 1 sprig thyme
- 1 bay leaf
- 3-4 stems parsley
- 2 lobster tails in shells
- 1/4 C marsala wine
- 1 C white wine
- 3/4 C white rice
- 1 tsp salt
- 6 C fish or chicken stock
- 1 C cream
- pinch cayenne

Preparation
Step 1
In heavy saucepan, saute celery and onions in butter until tender. Add thyme, bay leaf, parsley and continue cooking until vegetables are light brown.
Cut lobsters in 8-10 pieces. Add to veggies and saute until shells begin to turn red and meat firm. Add wine. Reduce heat and simmer 10 minutes. Remove lobster, remove meat and return shells to pot.
In separate pot, cook rice 20 minutes covered in stock and salt. Add to veggies and simmer 45 minutes. Strain liquid. Add cream and simmer 5 minutes. Add meat and cayenne.
