Ingredients

  • 4 tsp olive oil
  • 2 carrots peeled and cut
  • 2 medium zucchini
  • 6 scallions, chopped
  • 1 can cream of celery
  • 2 garlic cloves, minced
  • 2 14 1/2 oz. can Petite Diced Tomatoes
  • 1 can low-sodium chicken broth
  • 3 red potatoes, peeled and cubed
  • 1 tsp. dried marjoram
  • 1/2 tsp dried oregano
  • 1/2 tsp freshly ground pepper
  • 20 oz can chicken breasts, drained and rinsed(apx.)
  • 1 can Navy beans rinsed and drained

Preparation

Step 1

Heat oil in large pot. Saute the carrots, scallions, zucchini,potato and garlic until softened. Stir in the tomatoes, broth, chicken, cream of celery and beans; bring to a boil, then stir in the marjoram, oregano, and pepper. Reduce the heat and simmer, covered, until the potatoes are tender.
