Summertime Chicken Bundles

Ingredients
- 1 teaspoon dried thyme
- 4 boneless, skinless chicken breast-halves (about 5 ounces each)
- 2 ears corn-on-the-cob, each cut into 6 pieces
- 1 cup baby carrots, sliced in half lengthwise
- 2 cups scrubbed, quartered small red potatoes (4 to 5 potatoes)
- 1 teaspoon salt

Step 1
1 Preheat grill to medium heat. Cut four 18- x 12-inch pieces of heavy-duty aluminum foil. Spray each piece with nonstick cooking spray. Combine the barbecue sauce, honey and thyme in a small bowl. Place 1 chicken breast half, 3 pieces corn, 1/4 cup carrots and 1/2 cup potatoes in the center of each prepared foil piece. Sprinkle each with 1/4 tsp. salt. Spoon 1/4 cup sauce mixture over the chicken and vegetables on each foil piece.
2 Fold the foil over the chicken and vegetables so the edges meet. Seal the edges, making a tight 1/2-inch fold. Fold again, allowing space on the sides.
3Place the foil packets on the grill. Cover and grill, rotating the packets a half turn after 10 minutes, until the chicken is cooked through and the juices run clear when pierced with a knife and the vegetables are tender, 15–25 minutes. Place the packets on plates. Carefully fold the foil back, allowing the steam to escape. Serve.
