Ingredients
- 18 to 20 chicken wingettes & drumettes (I used frozen, thawed)
- 1 to 2 tablespoons olive oil
- 1 tablespoon chili powder
- 1 tablespoon smoked paprika
- 1 teaspoon ground cumin
- 1/2 to 1 teaspoon ground cayenne pepper, to taste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 1/2 teaspoons kosher salt
- 1 teaspoon ground black pepper

Preheat oven to 350°F. Line a large rimmed baking sheet with heavy-duty aluminum foil and set a wire rack over the foil. Set aside.
Blot the wings dry with paper towels. Place in a large mixing bowl; using your hands, rub the olive oil evenly into each piece.
In a small bowl, whisk together all the remaining ingredients. Sprinkle half the seasoning mix onto the chicken wings and rub it in. Flip wings and sprinkle remaining half onto wings and rub it in well. Place the wings on the wire rack.
Bake for 25 to 30 minutes, then flip wings over and bake for an additional 10 minutes. Place an oven rack in the top position of oven and broil on medium heat until well browned. (Watch them closely so they don't burn.)
Serve with celery sticks and chunky blue cheese dressing, if desired.
