  • Icing:
  • 3/4 cup butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 cups all-purpose white flour
  • 1-1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 2/3 cup milk
  • 1 cup butter, softened
  • 4 cups icing sugar
  • 2 tbsp milk

Preparation

Step 1

Line 24large muffin cups with paper liners or grease lightly; set aside.

In large bowl, beat butter with sugar until fluffy. Beat in eggs, one at a time, then vanilla.

In separate bowl, stir together flour, baking powder, cinnamon, nutmeg and salt, and then stir in butter alternately with milk. Spoon into muffin cups.

Bake in 400ºF (200ºC) oven for about 25 minutes or until golden brown and tops spring back when lightly touched.
