Ingredients
- Meat:
- 2 lbs ground sirloin meat
- 2 lbs ground pork loin
- 2 lbs ground veal
- Vegetables:
- 1.5 large white onion
- 1 head celery
- 3 large carrots
- Base Sauce:
- 3 2lb cans crushed San Marzano tomatoes
- 2 small cans tomato paste
- 1 qt heavy cream
- Roasted garlic slices to taste (10 heads) or 25 cloves
- s/p
- Parmesan cheese to taste

Preparation
Step 1
In large pot brown all meats and discard oil.
Puree all vegetables in food processor and drain excess liquid.
Add chopped tomatoes, puree of vegetables, paste and 1 can of water, and garlic and simmer 1.5 - 2 hours.
Add heavy cream and simmer for additional hour.
Finish with parmesan and season with salt and pepper.
Garlic:
Slice 25 cloves of garlic, put in small sauce pot and cover with EVOO, simmer on very, very low flame until golden, brown, delicious.
