Ingredients
- Turkey:
- 3 pound boneless turkey breast
- Olive oil or avocado oil
- Salt and pepper to taste
- 1 teaspoon dried marjoram
- 1 teaspoon dried rosemary
- 1 teaspoon ground sage
- Gravy:
- Drippings from turkey
- 1/4 cup flour
- 1/2 cup dry red wine
- 1 small shallot, diced
- 2 cups low-salt chicken broth

Step 1
Preheat over to 325 degrees on the convection roast setting, or bake at 350 degrees.
Season the turkey all over with the salt, pepper, majoram, rosemary an sage. Place turkey on a roasting rack in a roasting pan. Roast the turkey basting every 15 minutes until meat gets to 165 degrees. Place turkey on a cutting board and tent with aluminum foil for about 10 minutes.
Put turkey drippings in saucepan. Add flour and stir. Add wine and shallots, and bring to a boil. Add the broth and bring back to a boil; cook for about 5 minutes. Taste for seasoning and add salt and pepper if desired.
