Ingredients

- Ricotta cheese 1/2 cup 125 mL
- Chopped smoked salmon 1/4 cup 60 mL
- Cream cheese, softened 1/4 cup 60 mL
- Chopped fresh dill 1 tbsp. 15 mL
- Pepper 1/4 tsp. 1 mL
- All-purpose flour 1 cup 250 mL
- Baking powder 1 tsp. 5 mL
- Salt 1/4 tsp 1 mL

- Large eggs 3 3
- Milk 1/3 cup 75 mL
- Butter, melted 2 tbsp. 30 mL
- Granulated sugar 2 tbsp. 30 mL

Preparation
Step 1
Combine first 5 ingredients. Set aside.
Combine next 3 ingredients in a small bowl. Make a well in the centre.
Whisk next 4 ingredients in a separate bowl and add to the well. Whisk until smooth. Pour about 1/4 cup (60 mL) batter into each of 6 greased 6 oz. (170 mL) ramekins. Carefully spoon salmon mixture over batter. Pour remaining batter over top. Bake in a 350ºF (175ºC) oven for 15 to 18 minutes until slightly puffed but firm to the touch. Let stand for 5 minutes before removing blintz cups from ramekins to a serving plate. Makes 6 blintz cups.
