Ingredients

  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (15 oz) can sweet corn
  • 2 c. red grape tomatoes, halved
  • 1/2 c. red onion, chopped
  • 1 English cucumber, seeded and strip-peeled
  • 1/2 c. cilantro or 1/2 c. fresh parsley, minced
  • 4 basil leaves, minced
  • 1/4 c. olive oil
  • 1/8 c. balsamic vinegar
  • salt and pepper to taste
  • 1/3 lb. Feta cheese, crumbled

Step 1

Combine beans corn tomatoes onion cucumber cilantro or parsley and basil in a bowl. Combine olive oil and balsamic vinegar and whisk to emulsify; season with salt and pepper. Pour dressing over the salad and gently toss. Refrigerate until ready to serve. Sprinkle feta over the salad just prior to serving.
