Ingredients
- 1 (15 oz) can black beans, rinsed and drained
- 1 (15 oz) can sweet corn
- 2 c. red grape tomatoes, halved
- 1/2 c. red onion, chopped
- 1 English cucumber, seeded and strip-peeled
- 1/2 c. cilantro or 1/2 c. fresh parsley, minced
- 4 basil leaves, minced
- 1/4 c. olive oil
- 1/8 c. balsamic vinegar
- salt and pepper to taste
- 1/3 lb. Feta cheese, crumbled

Preparation
Step 1
Combine beans corn tomatoes onion cucumber cilantro or parsley and basil in a bowl. Combine olive oil and balsamic vinegar and whisk to emulsify; season with salt and pepper. Pour dressing over the salad and gently toss. Refrigerate until ready to serve. Sprinkle feta over the salad just prior to serving.
