Ingredients

  • ½ cup quick cook rolled oats
  • ¼ cup white flour
  • ¼ cup whole wheat flour
  • ⅛ cup Splenda brown sugar
  • 1 t baking powder
  • ½ t cinnamon
  • ⅜ cup low fat sour cream
  • ⅜ cup low fat or skim milk
  • ¼ cup egg substitute or 1 large egg, beaten
  • ½ t vanilla
  • ¼ cup raisins
  • ⅛ cup chopped walnuts
  • 1 T butter, melted

Preparation

Step 1

In a large bowl, combine the dry ingredients. Blend in the sour cream, milk, egg, butter, and vanilla. Stir in the raisins and walnuts. Using a ¼ cup, drop on a pre-heated griddle (325°F).

Variations: add a mashed banana, or substitute blueberries or raspberries for the raisins, or substitute pecans for the walnuts.
