Ingredients
- 5 lbs. meaty buffalo ribs
- 1/3 cup water
- 1/2 cup tomato ketchup
- 1/3 cup oil
- 1/3 cup brown sugar
- 1/4 cup cider vinegar
- 1 medium onion, grated
- 1 1/2 teaspoons chili powder
- 1/2 teaspoon cayenne pepper
- 1 1/2 teaspoons salt

Step 1
Put ribs in a heavy plastic bag. Combine the remaining ingredients and pour them over the ribs. Close the bag tightly and turn to coat the ribs. Refrigerate overnight. To cook, remove them from the marinade and turn them out on the cooking rack of a smoker. Reserve the marinade for the sauce. Smoke the ribs 4-5 hours or until tender. Bring the reserved marinade to a boil and serve it with the ribs as a sauce.
