Ingredients
- 2 c. unbleached all-purpose flour
- 2 c. milk (2% is fine but don’t go lower)
- 1 t. sugar
- 1 t. salt
- 2 ½ t active dry yeast (or 1 envelope)
- ½ c. warm (110°) water
- ¼ c. unsalted butter, melted
- 2 eggs
- ¼ t. baking soda

Step 1
In a large bowl, place the warm water, sugar and yeast. Stir with a fork to dissolve the yeast. In a 2-cup glass measure, blend salt and milk. Heat for about 2 minutes in microwave, until warm but not too hot (not more than 110°). When yeast mixture is foamy, add milk mixture, flour, and melted butter. Blend with a whisk to dissolve as many lumps as possible. The batter will be thin. Cover the bowl with plastic wrap and let stand overnight at room temperature. When it is time to cook the waffles, beat in the eggs and baking soda. Pour about ½ c. batter into a preheated waffle iron and bake until golden and crisp. Makes about 10 waffles. Delicious served with Orange Butter Fluff.
