Ingredients
- 6 med. Baking potatoes, peeled
- ¼ cup butter
- 1 med. Onion, chopped
- 1 T. All-purpose flour
- 1 tsp. salt
- ¼ tsp pepper
- 2 cups milk
- 2 cups shredded Sharp Cheddar Cheese (~8 oz.)
- Paprika

Preparation
Step 1
1. Preheat oven to 375 degrees.
2. Boil potatoes until just softened (~30-35 minutes), cut into 1/8 inch slices.
3. Melt butter in saucepan, medium heat. Cook onion till tender.
4. Stir in flour, salt, and pepper until bubbly.
5. Remove from heat, stir in milk and 1 ½ cups of cheese. Heat to boiling and stir one minute.
6. Spread ½ potatoes in casserole pan. Pour ½ cheese sauce over potatoes. Add rest of potatoes and pour the rest of the cheese.
7. Bake one hour, uncovered. Sprinkle rest of cheese and paprika over potatoes and bake (~15 minutes).
*increase amount of cheese sauce (not onion)
*may add panko bread crumbs to cheese topping ( ¼ cup).
