Pork and Chive Pot Stickers

Ingredients
- 4 oz. ground pork
- 1 tablespoon minced fresh chives
- 1 tablespoon water, plus more for wrappers
- 1 1/2 teaspoons soy sauce
- 1 1/2 teaspoons dry sherry
- 1 teaspoon minced fresh ginger
- 1/2 teaspoon toasted sesame oil
- 1/2 teaspoon cornstarch
- 20 wonton wrappers (from one 12-ounce pkg)
- 1 Tablespoon vegetable oil

Preparation
Step 1
1. Combine ground pork, chives, water, soy sauce, shery, ginger, sesame oil, and cornstarch.
2. Place a heaping teaspoon of pork mixture in the center of 1 wonton wrapper. Lightly wet edge of wrapper, fold over, and press to seal. Repeat to form remaining dumplings.
3. Bring a large pot of water to a boil. Workign in 2 batches, boil dumplings until cooked through, about 4 minutes. Transfer to a plate using a slotted spoon. Heat vegetable oil in a large nonstick pan over medium-high heat. Working in 2 batches, brown dumplings, about 1 1/2 minutes per side. Serve with soy-ginger dipping sauce.
Soy Ginger Dipping Sauce
(Makes about 1/2 cup)
1/4 cup soy sauce
3 Tbls. rice vinegar
1 Tbls. minced fresh ginger
2 teaspoons sugar
1/4 teaspoon toasted sesame oil
Stir together soy sauce, vinegar, ginger, sugar, and oil in a bowl.
