Ingredients

  • Pastel Glaze:
  • 1 cup butter, softened
  • 1 cup sugar
  • 2 cups flour
  • 1/4 tsp salt
  • 2 tsp vanilla
  • 1 cup filberts, finely ground
  • Confectioners' sugar
  • 2 1/2 cups confectioners' sugar, sifted
  • 3 to 4 tbsp hot water (OR orange OR lemon juice)
  • Red food coloring

Preparation

Step 1

Use blender or food processor to grind filberts.

Cream butter and sugar; stir in flour, salt and vanilla. Add nuts and mix well.

Form cookies by rolling teaspoonfuls of dough into balls. Place balls 1 inch apart on ungreased baking sheets; flatten slightly. Bake in a preheated 300 F oven for 18 to 20 minutes. Cool slightly; then roll in confectioners' sugar. Cookies may also be iced with Pastel Glaze.

Pastel Glaze: Note that the flavor of the glaze can be changed by substituting orange or lemon juice for the water. To make glaze, add water and food coloring gradually to sugar. Be careful to add only a few drops of color at a time. Beat mixture until smooth; drizzle or pour over cookies.
