Basic Chocolate Cake

Ingredients
- 1 cup unsweetened cocoa powder (natural or dutch)
- 2 1/2 cups flour
- 2 cups sugar
- 1 1/2 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 3 large eggs at room temp.
- 3/4 cup oil
- 1/2 cup sour cream
- 2 tsp. vanilla

Preparation
Step 1
Preheat oven to 350'. coat two 9" pie pans with spray and line the bottoms with parchment paper.
Whisk cocoa powder and 1 1/2 cups boiling water in a medium bowl until smooth. Set aside.
Whisk the flour, sugar, baking powder, baking soda and salt in a large bowl until combined. Add the eggs, oil, sour cream and vanilla and beat with a mixer on medium speed until smooth, about 1 minute. Reduce mixer to low; beat in the cocoa mixture in a steady stream until just combined. Finish mixing with a spatula. (The batter will be thin).
Divide the batter between the pans and tap pans on counter to settle.
Bake 30 to 40 minutes or until a toothpick comes out clean.
Cool for 10 minutes and remove from pans. Let cool on racks.
