Ingredients
- 1/4 pound salt pork, diced (or bacon)
- 5 potatoes, peeled and cut inti 1/2-inch cubes
- 1 onion, chopped
- 3 cloves garlic, minced
- 3 stalks celery, Tops and leaves included, chopped
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon dried dill
- 1/2 teaspoon dried parsley
- 1/2 teaspoon dried basil
- 1/4 teaspoon pepper
- 1 1/2 pound cod filets
- 1 can evaporated milk

Step 1
In a 4-6 quart pot, saute salt pork, garlic and onion in a little water until soft, stirring frequently. Add potatoes. Add enough water to cover the potatoes. Bring to boil and then reduce to a simmer and cook until potatoes are soft.
When potatoes are almost done, lay fish on top. Add seasoning and cover. When fish starts to break apart, add evaporated milk. Keep warm over low heat (do not boil) until ready to serve.
