- 1 cup (2 sticks) softened butter
- 2 cups powdered sugar (divided)
- 1/2 tsp. vanilla
- 2 cups flour
- 1/8 tsp. salt
- 2 cups finely chopped macadamia nuts (or walnuts)
- (1# macadamias)
Heat oven to 350 degrees.
In mixer bowl, beat the butter with 1/2 cup of the powdered sugar until light and fluffy.
Beat in the vanilla.
In a separate bowl, whisk together the flour, salt and nuts.
Beat the flour mixture slowly into the butter on low speed ujntil evenly combined
to form a dough.
Roll the dough into 1 inch balls. If the dough is too soft, chill it in the refrigerator until
it's easy to handle.
Place the cookies at least 2 inches apart on an ungreased cookie sheet. Bake until lightly browned
about 15 minutes.
While the cookies are still hot, gently roll them once in the remaining powdered
sugar, then place cookies on a rack to cool. Once the cookies are cool, roll
them again in the powdered sugar.
Store the cookies in tightly sealed plastic bags. They also freeze well.
