Ingredients
- 2.25 2.25 2.25 pounds skin-on chicken thighs
- 1/2 1/2 1/2 cup fresh lime juice
- 3 3 3 teaspoon fresh lime zest
- 1/4 1/4 1/4 cup olive oil
- 4 4 4 tablespoon finely chopped fresh Chinese parsley
- 2 2 2 jalapenos, finely chopped
- 4 4 4 cloves garlic, finely chopped
- 1 1 1 tablespoon honey
- 2 2 2 teaspoons salt
- 1 1 to teaspoon chili powder or to taste

Preparation
Step 1
Preheat oven to 400°F. Clean chicken, remove bones and pat dry; set aside.
In a large bowl, mix all marinade ingredients using a whisk. Make sure marinade is well combined. Add chicken to marinade and coat evenly.
Place chicken in baking pan and bake for 20-25 minutes until skin becomes brown and charred and juices run clear.
Makes 6 servings.
