Ingredients

  • 2.25 2.25 2.25 pounds skin-on chicken thighs
  • 1/2 1/2 1/2 cup fresh lime juice
  • 3 3 3 teaspoon fresh lime zest
  • 1/4 1/4 1/4 cup olive oil
  • 4 4 4 tablespoon finely chopped fresh Chinese parsley
  • 2 2 2 jalapenos, finely chopped
  • 4 4 4 cloves garlic, finely chopped
  • 1 1 1 tablespoon honey
  • 2 2 2 teaspoons salt
  • 1 1 to teaspoon chili powder or to taste

Preparation

Step 1

Preheat oven to 400°F. Clean chicken, remove bones and pat dry; set aside.

In a large bowl, mix all marinade ingredients using a whisk. Make sure marinade is well combined. Add chicken to marinade and coat evenly.

Place chicken in baking pan and bake for 20-25 minutes until skin becomes brown and charred and juices run clear.

Makes 6 servings.
