Ingredients
- 1 medium onion . minced
- 1 teaspoon vegetable oil
- 1/2 teaspoon table salt
- 1 teaspoon minced garlic
- 1/4 teaspoon ground black pepper
- 2 1/2 pounds russet potatoes (about 5 medium), peeled and sliced 1/8 inch thick
- 2 cups 2% milk
- 2 teaspoons cornstarch
- 1 tablespoon water
- 3 tablespoons light cream cheese
- 2 ounces grated Parmesan cheese (about 1 cup)

Preparation
Step 1
1. Slice and layer potatoes in 13 X 9 glass baking dish
2. Mix together: oil, salt, garlic, pepper, milk, water, cream cheese, cornstarch
3. Spead lightly over this layer
4. Add another layer of potatoes
5. Spread mixture over this layer
6. Add final layer of potatoes & mixture
7. Add parmesan cheese on top
8. Bake in oven ~ 2 Hours at 350 degrees
