Ingredients
- 4 carrots, peeled and cut into 1/2" slices
- 1 piece ginger root, about 2 inches, peeled and cut into 1/2" pieces
- 1 shallot, peeled and cut into 4 pieces
- 1 clove garlic, peeled
- 1 tsp. dry mustard
- 1/2 cup apple juice
- 1/3 cup rice vinegar
- 1/4 cup water
- 2 Tbsp. mirin
- 1 Tbsp. soy sauce
- 1 Tbsp. Asian toasted sesame oil

Preparation
Step 1
Place all ingredients in a blender jar in order listed. Blend on high for 30 to 40 seconds. Serve with crisp, chopped lettuce and tomato. Store unused dressing in a tightly sealed jar in the refrigerator for up to 1 week.
