Ingredients
- parmesan cheese 3/4 cups or grated romano
- milk 1/2 cup
- beef broth 1/2 cup
- parsley 1/2 cup fresh, chopped
- eggs 3 beaten
- oregano 2 tablespoons dried
- garlic 1 tablespoon finely minced
- kosher salt 1 tablespoon
- ground black pepper 1 tablespoon
- basil 2 teaspoons dried
- nutmeg 1/8 teaspoon
- bread crumbs 1 cup
- ground chuck 2 pounds

Preparation
Step 1
Preheat oven to 425°
In a large bowl, stir in all ingredients, (except the ground chuck, and beef broth) mix well
Add the ground chuck, mix together throughly using a fork. (Using your hands will make the meat tough)
Using a ice cream scoop shape the meat mixture into balls, (about 2-inches or 2 oz. each)
Coat a baking sheet with non-stick spray
Space the meatballs on the sheet so that they are not touching
Cover the bottom of the pan with the beef broth
Bake for approx. 25 minutes, or until the meatballs are cooked through
Makes approx. 27 meatballs
