This cookie bar is a mix between a Crisp and a Magic Bar/Seven Layer Bar. The combination works perfect together and gave you just a hint of raspberry flavor without being too overpowering.

Ingredients

  • Crisp topping:
  • 1 1/2 cup graham crackers, crushed finely
  • 1/2 cup (1 stick) butter
  • 2 cups White Chocolate Chips
  • 2 cups Coconut
  • 1 (8 oz) jar of raspberry jam
  • 1 can sweetened condensed milk
  • Milk/Dark chocolate for decorating the top
  • 6 Tbls. flour
  • 1/4 cup packed brown sugar
  • 1/4 cup sugar
  • 1/4 tsp. cinnamon
  • 1/4 tsp. salt
  • 5 Tbls. butter, softened

Preparation

Step 1

Preheat the oven to 350. Melt the butter in a 13 x 9 pan, while you crush the graham crackers finely. Pour graham crackers into pan of melting butter and mix together until coated evenly, and press and form crust firmly with a spoon. Sprinkle white chocolate chips, and coconut on top. Mix together the raspberry jam and sweetened condensed milk until it's all smooth and pour over white chocolate and coconut. Sprinkle your crisp mixture on top and bake for 30-35 minutes.

Crisp topping:
Mix the flour, brown sugar, sugar, cinnamon, and salt together. Add the butter and with a fork smoosh the butter in with the sugar mixture, until the mixture looks like crumbly wet sand.
