Ingredients
- frosting:
- 1 c oil
- 3 c flour
- 2 c sugar
- 2 tsp baking powder
- 2 tsp baking soda
- 2 tsp cinnamon
- 1 tsp salt
- 2 c shredded carrot
- 2 c unsweetened applesauce
- 2 tsp vanilla
- 1 1/2 c walnuts chopped
- 6 oz cream cheese
- 1/2 tbsp vanilla
- 4 c powdered sugar

Preparation
Step 1
preheat oven 350. grease 9 x 13 cake pan. in large bowl, add flour, sugar, baking powder, baking soda, cinnamon; set aside.
in another large bowl, combine oil, carrots, applesauce and vanilla. stirring until smooth. stir in flour mixture, mixing until barely combined. add walnuts, stirring until just combined.
transfer batter to pand and bake for 35-40 minutes or until cake springs back lightly when touched in the middle and begins to pull away from sides of the pan. cool.
frosting:
using hand mixer combine cream cheese and vanilla on meduim speed until smooth. on low speed add sugar 1/2 c at a time then beat on high speed until light and fluffy.
