Ingredients

  • 1 small can sliced black olive
  • 1 can black beans, drained and rinsed
  • 1 small can corn, drained
  • 4 Roma tomatoes, diced
  • 1 packaged Italian salad dressing mix
  • 2 avocados, peeled and diced
  • 1 jalapeno, seeded and finely chopped
  • 1 small red onion, chopped
  • 1/2 red pepper, chopped
  • 5 green olives, chopped
  • 1/4 cup cilantro, chopped
  • 1/4 cup red wine vinegar
  • 1/3 cup olive oil
  • Juice of 1 lime

Preparation

Step 1

Place diced avocados in small bowl with red wine vinegar right away so avocado doesn't start to turn brown. In a small bowl, mix together olive oil and dressing mix. In a medium serving bowl, add the remaining ingredients, then the avocados and red wine vinegar, mix together. Pour the olive oil and dressing mix over ingredients, mix well. Best if served with Scoop Tostitos. Refrigerate until ready to serve.
