  • 1 CUP BROWN SUGAR
  • 4 TSP CORNSTARCH
  • 6 CUPS SLICED FRESH PEACHES
  • 1/2 CUP MILK
  • 2 TBSP SUGAR
  • 2 CUPS BISQUICK
  • 1 TSP LEMON RIND

Step 1

COMBINE BROWN SUGAR AND CORNSTARCH IN A PAN. ADD PEACHES ADN TOSS TO COAT. COOK OVER LOW HEAT, STIRRING CONSTANTLY UNTIL BOILING AND THICK. REDUCE HEAT AND COOK 2 MINUTES LONGER. SET ASIDE.

COMBINE BISQUICK, SUGAR, LEMON RIND. ADD MILK, STIR WITH FORK UNTIL MOIST. RETURN PEACHES TO A BOIL. POUR INTO 2 QUART OBLONG BAKING DISH. DROP BATTER ON TOP. BAKE 400 DEGREES FOR 20 - 25 MINUTES.

LEMON SAUCE:
MIX 1/2 CUP SUGAR, 2 TBSP CONSTARCH. 1 1/4 CUP MILK IN SAUCE PAN. BOIL UNTIL THICK. REDUCE HEAT STIR IN 2 TSBP BUTTER, 1 TSP LEMON RIND, 3 TBSP LEMON JUICE.
